Ingredients
  • 1 egg
  • 100g granulated sugar
  • 8g vanilla sugar
  • pinch of salt
  • 125g Greek yogurt
  • juice of 1/4 lemon
  • grated zest of 1/2 lemon
  • 80 ml sunflower oil
  • 15g baking powder
  • 2 tbsp coconut
  • 300g fine textured semolina flour
  • extra coconut for coating
Method

1. Preheat the oven to 200 C / 390 F and line two baking sheets with parchment paper.

2. In a medium mixing bowl, cream the egg, sugar and vanilla sugar. Add the yogurt, lemon juice, grated lemon zest and oil, stir until well combined.

3. Add the baking powder, coconut and semolina flour, stir until incorporated.

4. Chill dough at room temperature for 5 to 10 minutes.

5. Roll dough into 25 balls, coat with coconut and place on lined baking sheet. Flatten each ball lightly with your hands.

6. Bake in preheated oven for about 25 minutes or until browned.
