Turkish Pogaca (Without Yeast and Kneading) | Episode 480

Ingredients

Dough
  • 1 egg
  • 1 egg white
  • 200 ml (1 cup) yoghurt
  • 75 ml (1/2 cup) olive oil
  • 125g butter, softened
  • 1,5 tsp salt
  • 2 tbsp granulated sugar
  • 15g baking powder
  • 450g (3 1/2 cups) all-purpose flour
  • 1 tbsp dried dill, optional
Filling
  • 200g feta cheese
Other ingredients
  • 1 egg yolk + 2 tbsp milk
  • nigella, poppy or sesame seeds


Method

1. Preheat the oven to 200 C / 390 F and line a baking tray with parchment paper.

2. In a large mixing bowl, combine the ingredients for the dough and stir until well combined. Add more flour if needed. 

3. Take a piece of dough that is approximately the size of an egg and flatten on the palm of your hand.
Place cheese in the center of dough and close up like a half-moon.Make sure the edges are tightly pinched so no filling escapes during the baking process.

4. Place the pogacas on the lined baking tray. 

5. Whisk together the milk and egg yolk. Brush the pogacas with the egg yolk mixture.

6. Sprinkle some seeds on the top of each pogaca.

7. Bake in preheated oven for about 25 to 30 minutes or until golden brown.
