Magnolia Bakery Banana Pudding | Episode 479

Ingredients
  • 560 ml whole milk
  • 115 ml heavy cream
  • 170g granulated sugar
  • 2 egg yolks
  • 4 tbsp cornstarch
  • 60g butter
  • 2 tsp vanilla extract
  • 2 bananas, sliced
  • Vanilla wafers, crushed
Method:

1. Bring the milk, heavy cream and sugar to simmer in a pan. 

2. In a medium bowl, stir together the egg yolks and cornstarch. Ladle a cup of the hot milk mixture over the eggs and whisk immediately. While continuing to whisk pour in the rest of the hot milk into the eggs. 

3. Return the mixture back to the pan over medium heat. Whisk constantly for 6-8 minutes or until it has thickened.

4. Once thickened, remove from the heat and whisk in the butter and vanilla extract. Allow to cool for about 30 minutes before assembling a banana pudding.

5. Cover the bottom of a dish with pudding followed by a later of crushed vanilla wafers. Cover with a layer of pudding and top with a layer of banana slices. Continue layering the pudding, wafer cookies and banana slices until you reach the top, ending with a final layer of banana pudding.

6. Refrigerate for at least 3 hours before serving.
