Ingredients
- 125g unsalted butter, at room temperature
- 60 ml sunflower oil
- 50g powdered sugar
- 2 tbsp cornstarch
- 1 cup roasted almond shavings
- 1 tsp vanilla sugar or vanilla extract
- 350g all-purpose flour
For decorating
- 50g white chocolate, melted
- 50g dark chocolate, melted
- 50 unsalted almonds
Method
1. Preheat the oven to 160 C / 320 F and line a baking sheet with parchment paper.
2. In a large mixing bowl, cream the butter, sunflower oil, powdered sugar, cornstarch and vanilla. Add half of the flour and beat until well combined. Add the remaining flour and beat until incorporated. Beat in the roasted almonds.
3. On a lightly floured surface, roll dough out into a square. Cut into small squares and place on lined baking sheet.
4. Bake the cookies in the preheated oven for about 25 minutes or until light brown.
5. Allow the cookies to cool completely on baking sheet. Then decorate with chocolate and almonds.
