Ingredients
  • 150g unsalted butter, softened
  • 250g granulated sugar
  • 1 tsp vanilla extract
  • 1,5 tsp red food colouring (Wilton Christmas Red)
  • 4 eggs
  • 30g cocoa powder
  • 125g all-purpose flour
  • 1 tbsp white vinegar
  • 2 tbsp white chocolate chips
Method:

1. Preheat the oven to 180 C / 355 F. Grease and line a 8x8x3in brownie pan with parchment paper.

2. In a large mixing bowl, cream the butter and sugar. Add in the eggs one at a time and cream for another 2-3 minutes. Add the vanilla and red food colouring. Beat for about 1 minute.

3. Beat in the white vinegar and cocoa powder. Add the all-purpose flour and beat for about 1 minute or until well combined.

4. Pour the batter into the greased and lined pan. Top with the white chocolate chips and bake in the preheated oven for about 25 to 30 minutes. 

5. Allow to cool completely before removing from the pan.
