Turkish Simit Pogaca (Sesame Bread) | Episode 435

Ingredients

  • 200 ml milk, lukewarm
  • 7g instant yeast
  • 1 tbsp granulated sugar
  • 1 egg
  • 400g all-purpose flour
  • 1,5 tsp salt
  • 100 ml sunflower oil
  • 2 tbsp pekmez (grape molasses or maple syrup)
  • 1 cup of water
  • 1 cup sesame seeds
  • 50g cheese 
Method:

1. Add the lukewarm milk, sugar and yeast to a large mixing bowl. Stir until yeast is dissolved. Let sit a few minutes.
2. Add the egg, half of the all-purpose flour and salt stir well.
3. Add the remaining flour and stir until incorporated.
4. Mix in the sunflower oil and knead for a few minutes. The dough should be soft but not sticky.
5. Transfer the dough to a lightly oiled bowl. Dust top of dough lightly with flour. Cover the bowl and allow to rise for about 15 minutes.
6. Meanwhile, mix the pekmez and water. Roast the sesame seeds and set aside.
7. Split the dough into 13 pieces and transfer to a oiled work space. Roll out or flatten with your hands to about 10-12 cm size. Fill them with cheese and close them carefully.
8. Dip the filled poğaça first in the water mixture and afterwards into the sesame. Place it on parchment paper lined baking sheet.
9. Cover the baking sheet and allow to rise for about 20 to 40 minutes or until doubled in size.
10. Cut the surface of each pogaca two times with a sharp knife. Bake them for about 20 minutes preheated oven at 200 °C - 390 F.
