Pumpkin Feta Dinner Rolls | Episode 415

MAKES 13 MEDIUM ROLLS

Ingredients
  • 250 ml milk, lukewarm
  • 14g dry yeast
  • 1 tbsp granulated sugar
  • 450g all purpose flour
  • 300g pumpkin puree (cooled before using)
  • 1,5 tsp salt
  • 1/2 tsp ground turmeric
  • 3 tbsp olive oil
  • 100g feta cheese, crumbled
  • pumpkin seeds 
  • extra oil
  • 1/2 tbsp honey + 2 tbsp water
  • 1 tbsp butter, melted
Instructions

1. In a medium mixing bowl, stir together the lukewarm milk, granulated sugar and yeast. Let sit for about 5 minutes. Add half of the flour, salt and turmeric powder, stir until well combined. Stir in the pumpkin puree. Add the remaining flour and knead until a smooth ball of dough begins to form. Add the oil and knead for 2-3 minutes more. Add more flour if needed.

2. Dust ball of dough with flour. Cover the bowl with a kitchen towel and allow to rise for about 50-60 minutes.

3. On a lightly floured surface, divide dough into 12-13 equal size balls. Dip your hands in oil and flatten each ball with your hands. Place crumbled feta cheese in the center and roll into smooth balls. Place on a lined baking pan. Repeat with remaining balls.

4. Cover the baking pan with kitchen towel and allow to rise for 20 to 30 minutes.

5. Meanwhile, preheat the oven to 200 C - 390 F.

6. Stir together the honey and water. Brush each top of dough with the mixture and top with pumpkin seeds.

7. Bake in preheated oven for about 25-30 minutes.

8. Remove from oven. While hot, brush each dinner roll with the melted butter.
