Olive and Cheese Loaf | Episode 412

Ingredients

  • 7g active dry yeast
  • 75 ml lukewarm water
  • 75 ml lukewarm milk
  • 1 tbsp granulated sugar
  • 250g all-purpose flour
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • pinch ground black pepper
  • 3 tbsp olive oil
  • handful pitted and halved black or green olives
  • 100g grated cheese (cheddar, Gouda, feta or your favorite cheese)
  • 1 garlic clove, mashed
  • 1 tbsp olive oil

Instructions

1. In a small mixing bowl, combine the lukewarm milk, lukewarm water, yeast, and granulated sugar. Stir and let sit for about 5 mins. Mix the all-purpose flour, salt, ground black pepper, and garlic powder. Stir until mixed. Pour in the yeast mixture and stir until a smooth ball of dough begins to form. Add the olive oil and stir. Fold in the pitted and halved olives until incorporated. Dust the ball with flour, cover the bowl and allow it to rise for 40 minutes or until doubled in size.

2. Turn the dough out onto a lightly floured work surface. Flatten the dough into a rectangle. Spread the cheese all over the dough. Fold the dough into a ball and place on a parchment paper lined baking pan. Cover and allow to rise for about 30 minutes.


3. Preheat the oven to 210C - 410F. Stir together the mashed garlic and olive oil.

4. Brush the top of the dough with the garlic oil. Using a serrated knife slash the loaf, about 1/4″ deep, across the top. 

5. Bake in preheated oven for about 20 to 25 minutes. Remove from oven and allow to cool for at least 10 minutes.
