Ingredients
  • 2 eggs
  • 50 ml olive oil
  • 175 g - 200 g all purpose flour
  • 15 g baking powder
  • 1 tsp salt
  • pinch black pepper
  • 1 bell pepper, chopped
  • handful sun-dried tomatoes, chopped
  • 100 g feta cheese, crumbled
  • fresh dill or parsley, chopped
  • 1 tbsp flax seeds or another seeds
  • 1 tbsp pumpkin seeds

Instructions

1. Preheat the oven to 200 C / 390 F and line a baking tin or use muffin cups.
2. In a bowl combine the chopped bell pepper, sun dried tomatoes, dill, crumbled cheese, seeds and salt.
Add half of the all purpose flour and the baking powder, stir until well combined. Add the remaining flour and stir until smooth. Add more flour if needed.
3. Roll into balls or use a ice cream scoop. Place the balls on the lined tin or use the muffin cups.
4. Bake in preheated oven for about 15 to 20 minutes or until golden brown.
