Basque Burnt Cheesecake Recipe | Episode 392

Ingredients
  • 1kg cream cheese
  • 7 eggs
  • 340g white sugar
  • 40g all purpose flour
  • 500ml heavy cream
  • butter for the pan

Instructions

1. Preheat the oven to 220C / 420F. Grease a round pan with butter and line with parchment paper. Use a round cake pan with a removable bottom so you can remove the cheese easily from the pan. Set aside.
2. Beat or whisk the cream cheese and 3 eggs. Add the other 4 eggs and whisk until smooth. Stir together the sugar and flour and combine with the cream cheese mixture. Stir in the heavy cream. Whisk until smooth.
3. Pour the cheesecake batter into the prepared pan. 
4. Bake for about 55 to 60 minutes or until the top is dark brown and cake is set but with a still very jiggly in the center and a skewer inserted into the centre comes out clean. Remove from the oven and leave to cool completely before removing from the pan. 
5. Allow to cool for about 2 hours and then refrigerate for at least 8-12 hours before serving.

  1. Hello, are you using a 6 or 8 inches pan? And are you using fan forced settings?

  2. I made 3/4 of the recipe in an 8" wide, 3" tall pan and after cooking the cake reached just over the top of the pan.
