Hazelnut Chocolate Muffins | Episode 351

INGREDIENTS
  • 3 eggs
  • 100 g white sugar
  • 125 ml heavy cream
  • 75 g melted butter
  • 8 g vanilla sugar
  • pinch salt
  • 1 tsp baking powder
  • 1 tbsp cocoa pwoder
  • 250 g all purpose flour
  • 100 g dark chocolate chips or chunks + more or topping
  • 100 g chopped hazelnuts + more for topping




INSTRUCTIONS

1. Preheat the oven to 175C/347F and line 12 muffin cups with paper liners.
2. In a mixing bowl, beat the eggs and sugar. Stir in the melted butter and heavy cream. 
Add the vanilla sugar and pinch salt, stir until well combined. 
3. Add the baking powder and all purpose flour, stir until incorporated. 
4. Stir in the chocolate chips and hazelnuts.
5. Scoop batter in lined paper cups. Top with remaining chocolate chips and hazelnuts.
6. Bake in preheated oven for about 25 minutes.
