Veggies and Shredded Chicken Soup | Episode 397

Ingredients
  • 1 onion, finely chopped
  • 1 carrot, peeled and finely chopped
  • 2 celery sticks, finely chopped
  • 2 garlic cloves, diced
  • 5 cups broccoli florets
  • 2 tbsp olive oil
  • 2 cups shredded chicken
  • 900ml chicken stock, homemade store-bought
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 250 ml milk or heavy cream
  • salt and pepper to taste

Instructions

1. Add the 2 tbsp olive oil to a deep pan and saute the chopped onion, carrot, celery stick, and garlic cloves for about 4 to 5 minutes. Add the broccoli florets and shredded chicken. Saute for another 3-4 minutes. Season with salt and pepper. 
2. In a small cup, stir together the cornstarch and water. Combine the chicken stock, cornstarch mixture, and milk with the veggies. Reduce heat to medium-low, cover and simmer until veggies are almost fully tender about 15-20 minutes.
3. Season with more salt and pepper cook 5 minutes more. Serve warm.
