Ingredients
- 125g soft butter
- 175g granulated sugar
- 2 eggs
- 1tsp vanilla extract or vanilla bean paste
- 350g all-purpose flour
- 1 1/2 tsp baking powder
- 1 lemon
- 100g granulated sugar + 100g powdered sugar for coating
Instructions
1. In a medium mixing bowl, combine the soft butter, eggs, sugar and vanilla extract.
Then add the grated zest of the lemon and 1/4 lemon juice.
Add the half of the flour and baking powder. Stir until well combined. Add the remaining flour and knead until a smooth ball of dough begins to form. Add more flour if needed.
2. Cover the dough with stretch foil and chill in the refrigerator for at least 1 hour.
3. Meanwhile, preheat the oven to 180 C / 355 F and line 3 baking trays with parchment paper.
4. Roll dough into small size balls. Coat with the sugar and then with the powdered sugar.
Place on lined baking sheet.
