INGREDIENTS

  • 9 medium ripe tomatoes, cut in half
  • 3 garlic cloves
  • 1 onion, peeled and cut in pieces
  • 3 tbsp olive oil
  • pinch sea salt
  • pinch black pepper
  • 1/4 tsp paprika powder
  • Springs of fresh basil
  • 1 L chicken or vegetable broth




INSTRUCTIONS

1. Preheat the oven to 220C 428F

2. Place the tomatoes, garlic and onion on a large baking tray.

3. Drizzle with olive oil, sprinkle with salt, black pepper and paprika powder.

4. Roast for about 30 minutes, or until the tomatoes are soft.

5. Once veggies are done, place the vegetables into a large pan and pour in the stock. Add the basil leaves and add a  pinch more salt. Bring to the boil, then simmer for 15 to 20 minutes more.

6. Remove from heat, then blend with a hand blender until smooth.

7. Pour into bowls, drizzle with some olive oil and garnish with fresh basil leaves.
