INGREDIENTS

  • 2 tbsp olive oil
  • 450 g mixed vegetables, frozen or fresh (Celery, carrot, broccoli, bell pepper, onion, zucchini, green beans or your favorite vegetables)
  • 500 ml diced tomatoes, canned
  • 1000 ml hot water
  • salt
  • 1 chicken bouillon (10 g)
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ginger powder

INSTRUCTIONS

1. Heat oil in a large saucepan over medium heat. Add vegetables. Cook, stirring, for about 5 minutes.
2. Add tomato sauce. Cook stirring 3-4 minutes more. Add water, salt and chicken bouillon. Bring to the boil. Reduce heat to low. Simmer for 10 minutes or until vegetables are just tender.
