Autumn Tomato and Vegetable Soup | Episode 341

INGREDIENTS
- 2 tbsp olive oil
- 450 g mixed vegetables, frozen or fresh (Celery, carrot, broccoli, bell pepper, onion, zucchini, green beans or your favorite vegetables)
- 500 ml diced tomatoes, canned
- 1000 ml hot water
- salt
- 1 chicken bouillon (10 g)
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/4 tsp ginger powder
INSTRUCTIONS
2. Add tomato sauce. Cook stirring 3-4 minutes more. Add water, salt and chicken bouillon. Bring to the boil. Reduce heat to low. Simmer for 10 minutes or until vegetables are just tender.
