Onion and Cheese Swirls | Episode 410

Ingredients
Dough:
  • 7g active dry yeast
  • 75ml lukewarm water
  • 75g lukewarm milk
  • 1 tbsp granulated sugar
  • 250g all-purpose flour
  • 1,5 tsp salt
  • 1 tsp garlic powder
  • 2 tbsp olive oil
Filling:
  • 1 tbsp olive oil
  • 2 onions, peeled, halved and thinly sliced
  • 1 tbsp honey
  • 125g grated cheddar and Gouda cheese


Instructions

1. In a large mixing bowl, combine the lukewarm milk, lukewarm water, yeast, and granulated sugar. Stir and let sit for about 5 mins. Add half of the all-purpose flour, salt, and garlic powder. Stir until mixed. Add the remaining flour and olive oil, knead until a smooth ball of dough begins to form. Cover the bowl and allow it to rise for 1 hour or until doubled in size.

2. Meanwhile, make the filling. Heat 1 tbsp olive oil in a skillet. Add the onions and cook for about 5-6 mins or until softened over medium-high heat. Add the honey and cook for another 2 mins. Remove from the heat and set aside.

3. Preheat the oven to 210C / 410F and line a round baking pan or cast-iron skillet with parchment paper. 

4. Turn the dough out onto a lightly floured work surface.
Pat, then roll the dough into an 18" x 10" rectangle.
Spread with the onion mixture, leaving 1" free of filling along the long edge farthest from you. Spread the grated cheese over the onions.
Starting with the long edge closest to you, roll the dough into a log, pinching the seam closed. 

5. Cut the log into 8-10 slices.
Place the rolls on the prepared pan leaving about 1" between them. Cover and allow to rise for about 25 mins, or until puffy. 

6. Bake in preheated oven for about 20 to 25 mins or until golden brown.
