Turkish beef kebab with finely diced veggies. 
Served as a wrap or simply with Turkish rice.

Ingredients

Kebab:
  • 1kg minced beef
  • 1 red bell pepper
  • 1 green pepper
  • handful parsley
  • 1 tbsp (hot) red pepper flakes 
  • 1 tbsp salt
  • 2 tsp red paprika powder
For the sumac seasoned onion:
  • 1 medium red onion
  • handful parsley, chopped
  • pinch salt
  • 1 tbsp olive oil
  • 1 tsp sumac
Method

1. Finely dice the bell pepper, green pepper and parsley and stir together with the minced beef, spices and salt. Using your hands, mix all ingredients together well, squeezing mixture to help break beef into smaller pieces.

2. Squeeze the mixture onto 15 to 20 metal or wooden skewers, using your hands, and flattening as you go. Set aside.

3. To make the sumac seasoned onions: Peel and slice the onions thinly. Then, sprinkle sumac, salt and olive oil over onions and add the chopped parsley. Gently massage them with your hand so that the onions can absorb the flavors of the spices.

4. Heat up cast iron grill pan with oil. Usually the heat will be higher middle of the pan than sides so flip skewers accordingly. Usually I try to cook for 4 minutes on each side to cook thoroughly. Move skewers from the sides of the pan to the middle as some skewers finish cooking. Then add new ones on the sides.

5. Serve the kebab with the sumac onions and Turkish rice or with wraps.
